I have similar corn-husking memories from my strangely rural childhood (though I grew up in Seattle... huh).

The one main difference is that I used to eat THE SILK.

Yup. It's sweet and kind of nutty. (Like me?) And I just realized I was the only person who did this the other day when I was husking corn with a friend of mine at a barbeque and mentioned it.

He was, to say the least, horrified, and pretty convinced it's dirty and possibly even poisonous. So there you go.

Thanks for this little walk down memory lane!

Avocado works whether you do it with lime and cilantro or basil and lemon. I'm also a big fan of your version, Seadragon. I do have to admit that I did cook the corn, for only for a couple of minutes, because it had been in my fridge for almost a week, and I wasn't sure how good it would be in it's raw state. A couple minutes of blanching has a way of doing good things to the sugars in corn.

This looks almost exactly like my lunch for the past couple of days. Except mine had avocado and cilantro, and lime juice instead of lemon.

The corn in your salad is raw, right? I used to eat corn raw as a guilty treat (everyone except my sister thought it was weird), but then I saw this corn recipe and it called for raw corn and I looked it up, and it turns out it's perfectly ok to eat. It just tastes fresher, in my opinion!
